I’d like to contribute something in the hopes that it helps, just as the Celiac community has done for me
Dear Reader,
My name is Max Manwaring-Mueller, and I currently work as a post-baccalaureate research assistant at the Buck Institute for Research on Aging, where I study an eclectic mix of subjects ranging from Space Medicine to Celiac Disease (CD) Epidemiology. I am also an enthusiastic home cook, always excited to try new gluten-free dishes and take recommendations for what to try next. As you might guess, I enjoy a night out with family and friends to explore what celiac-friendly food nearby cities and towns have to offer.
It is here, at the crossroads of junior scientist, amateur cook, and avid foodie, that I hope to blend my passions into something new: The Celiac Handbook. This ongoing project will focus on providing useful resources and breakdowns of important scientific literature that I’ve found valuable and believe are worth sharing. If you’ve found this page, chances are you’ve already discovered r/Celiac, the Celiac Project Podcast, or other helpful community resources—all fantastic tools that have saved me from weeks of pain and brain fog, given me the knowledge that I’m not alone, and bestowed upon me the confidence to start my own public project. From this Substack, you can expect weekly updates and insights into current scientific/medical literature, the occasional restaurant review, and a few anecdotal stories that have shaped my experience with CD - all of which I hope will be helpful for others, just as the CD community has helped me. This will never be behind a paywall, as everything here is something I’ve learned or enjoyed through the hard work of others.
